Earthquake Cake!


I'm not kidding, that's the name of this cake recipe Earthquake Cake...and although it looks like a mess when it's done, it tastes wonderful! I made it last week for our Bible study group and I thought you mike like to try it too! 


So, here is how you start....Butter and flour a 10 X 15 pan (and it is a good idea to use this size pan) and mix 1 Cup of Coconut and 1 Cup of Pecans and press them into the bottom of the pan. Then mix up a chocolate cake mix, German chocolate is good, but use whatever one you like and pour it in the pan over the nuts and coconut. Then mix up powdered sugar, cream cheese and 1 stick of oleo or butter and spoon the mixture over the cake...see picture below!



It looks funny, but it will taste good!

 Bake in it the oven at 350 degrees for 1 hour...and as it's backing the chocolate cake rises and it has an "earthquake" effect on the dessert!


 Here's the finished product...It doesn't look so pretty, but my does it taste wonderful. Hope you enjoy it as much as we did! ( Now for exercise class!)

Earthquake Cake

1 cup coconut
1 cup pecans
1 box chocolate cake mix
3 1/2 cups powdered sugar
1 8oz. cream cheese
1 stick oleo/butter

Mix the coconut and pecans, press into buttered, floured 10 X 15 pan. Prepare cake mix as directed and pour over coconut and pecans. Mix together sugar, cream cheese and oleo. Spoon over cake mixture. Bake 350 degrees for 1 hour.

The results will be earth shattering!
